Bí đỏ gọt bỏ vỏ, cắt miếng sau đó rửa qua nước lạnh.
Cho bí đỏ, 400ml nước lạnh, 110g đường, 1 muỗng canh nước cốt chanh, 1/4 muỗng cà phê muối vào nồi, bắt lên bếp nấu lửa vừa. Trong khi nấu thỉnh thoảng đảo cho bí chín đều. Khi thấy nước cạn là tắt bếp.
Cho bí, chuối bóc bỏ vỏ vào máy xay nhuyễn. Lấy chút dầu thoa lên khay hay lấy giấy dầu trải lên khay, sau đó đổ 1 lớp mứt không quá dày.
Bật lò nướng 100 độ C cho khay mứt vào sấy khô. Khi thấy mứt khô ráo, sờ tay không dính là được. Lấy mứt ra để nguội, sau đó cuộn tròn và cắt khúc dải ngắn tùy ý.
Dùng giấy bóng kính hay màng thực phẩm bọc mứt bí đỏ lại và bảo quản nơi thoáng mát.
